Light and Easy Macro-Friendly French Toast

There's nothing better than a perfect French Toast breakfast. Decadent, buttery, a dream to eat! Some like it thin and crisp, some like it thick and soft. Some like it sweet, some like it VERY sweet.
Believe it or not, I also like it savory, but I won't try to push the envelope too much today.
But French Toast doesn't always feel weight-loss friendly. It's hard to balance that rich and delicious buttery taste with getting the butter portions right for weight-loss (and without breaking the calorie bank!). That's why I wrote this recipe up; it's the one I personally use in my weight-loss journey. And I still use it in maintenance!
This Macro-Friendly French Toast recipe is light and easy, plus it's simple to pare it down for a single serving if you need to (this particular version serves 4). I's got 10 g of protein for just under 200 calories, so it won't leave you with the jitters and energy crashes that come from a super-sugary low-protein high-carb breakfast. And finally, it's a blank slate for your personal favorite toppings. Bananas, berries, nuts, nut butter, and of course, syrup are great options. Don't forget about whipped cream, nutella, vanilla yogurt, sweet cream cheese drizzle, or jam!

Yield: Makes 4 servings
Ingredients:
- 4 potato slider rolls (such as Martin's Slider Rolls)
- 4 whole eggs
- 1/2 cup unsweetened almond milk (plain or vanilla)
- 1/2 to 1 tsp vanilla extract
- 1/2 tsp cinnamon or pumpkin pie spice
- Pinch of kosher salt
- 1 tablespoon of butter, divided
Instructions:
To Prep:

1. Take each slider roll and pull them apart so you have 8 halves. If you like thin French Toast, take each half, and slice it so that you have 16 thinner slices. For thick french toast, simply leave it as 8.
2. In a shallow bowl with a lip or in a small casserole dish, whisk together the eggs, almond milk, vanilla, cinnamon, and the pinch of kosher salt. There should be no streaks in the egg mixture.
3. Place a large nonstick frying pan over medium-high heat, and add half of the butter. While the butter is melting, soak the bread slices in the egg mixture, turning once. Since they are small and thin, they won't need much time to soak up the liquid.
4. Grab a silicone spatula that's suitable for flipping. Rub a little bit of butter on both sides so that it can slide easily under the pieces of French Toast (that's my flipping-trick!)
To Cook:

1. Once the butter is melted and foaming, use the spatula to distribute the butter evenly across the pan. Add slices of the soaked bread to the butter (it should sizzle). Don't overcrowd the pan; just add enough slices so that you have a little room on each side to flip them easily.
2. Flip them once they are nicely browned on the bottom and can move easily in the pan. You may need to adjust the heat on your stove if they're burning or if it takes too long for them to brown. It should only take 2 to 4 minutes per side.
3. Once a piece is browned nicely on both sides, transfer to an oven-safe plate. You can keep your oven on "Warm" and place the plate on the center rack if you'd like to keep everything nice and toasty while the other bread pieces are frying.
4. Repeat until you have fried all the bread slices. You'll need to add the rest of the butter to the pan around halfway through. Serve with butter, syrup, powdered sugar, whipped cream, fruit, nuts, or anything your heart desires!
