Spiced Turkey and Butternut Squash Skillet with Goat Cheese

- 1 medium onion
- 2 cloves garlic
- 1 1/4 lbs lean ground turkey (93% lean works excellently)
- 4 cups cubed butternut squash
- 2 tsp cumin, divided
- 1 tsp smoked paprika, divided
- 1 tsp kosher salt, divided
- 1/4 tsp cayenne (or to taste)
- 1/2 cup water
- 3 cups baby spinach
- 1.5 oz soft goat cheese or crumbled feta cheese
Instructions:
To Prep:

1. Chop your veggies: dice the onion and mince the garlic.
2. If you did not purchase butternut squash that's already cubed, prep the squash following these steps here .
To Cook:
--
1. In a very large skillet (I used a 14"), sauteed onion and garlic in cooking spray until slightly browned.
2. Push the veggies to the side of the skillet, add olive oil to the middle, and sear turkey on top of the oil. Season with 1 tsp cumin, 1/2 tsp paprika, and 1/2 tsp kosher salt. Break turkey into chunks as you cook it.
3. Once turkey is cooked, add in butternut squash along with remaining 1 tsp cumin, 1/2 tsp paprika, 1/4 tsp cayenne pepper, and 1/2 tsp kosher salt. Add 1/2 cup water. Cover and cook on medium-low until squash is slightly soft, 10-15 minutes.
4. Uncover and add spinach. Mix until wilted.
5. Divide into 4 equal servings. For any unneeded servings, let them cool fully, place in individual lidded food containers, and store in the refrigerator until needed.
6. Top each serving with a 1/4 of the goat cheese. Enjoy while warm!
