Skillet Gnocchi with Sausage and Broccoli Rabe

This skillet gnocchi with sausage and broccoli rabe is hearty and delicious, and even though it comes together fast, it tastes like you spent all day making it. I used cauliflower gnocchi in this recipe because extra vegetables never hurt anyone, but regular store-bought potato gnocchi will work great too (and it will still fit your dinner calorie-target.)

Ingredients:

- 12 oz cauliflower gnocchi (regular store-bought gnocchi can also work)
- 1 1/2 tablespoons unsalted butter
- 1 large sweet onion, sliced
- 2 garlic cloves, minced
- 1 pound cooked Italian sausage, sliced
- 1 bunch broccoli rabe, cut into bite-size pieces
- 1/2 cup chicken broth
- Salt and freshly ground black pepper
- 1/2 teaspoon red-pepper flakes (optional)
- 1/3 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley


Instructions:

To Prep:

1. Cook and slice the sausage. A great hands-off way to cook your sausage is on a lined sheet-pan in a 375 F oven, for approximately 30-45 minutes (or until sausage reaches internal temperature of 165 F). Let cool before slicing.

1. While sausage is cooking, bring a large pot of salted water to a boil. Add the gnocchi and cook until the pasta floats to the surface, 4 to 5 minutes. Drain the gnocchi.

2. Prep the other ingredients: slice the onion, mince the garlic, cut the broccoli rabe into bite-size pieces, grate the parmesan cheese, and if using parsley, chop it roughly. Set ingredients aside.


To Cook:

1. In a large skillet, melt the butter over medium heat. Add the onion and sauté until translucent, 4 to 5 minutes. Add the garlic and sauté until fragrant, 1 minute more.

2. Add the sliced sausage and cook until it begins to brown, 3 to 4 minutes. Add the broccoli rabe and chicken broth, and bring to a simmer.

3. Continue to cook, tossing frequently, until the broccoli rabe is wilted and tender, about 5 minutes. Season with salt, pepper and red-pepper flakes (if desired).

4. Stir in the gnocchi, Parmesan and parsley, and toss well until combined. Divide into 6 (putting any unneeded portions in individual lidded food containers, letting them cool, and storing in the fridge or freezer). Serve immediately.
