Lean ground beef, green pepper, onion, and mushrooms combine to form the base of this recipe. Whole-wheat rotini pasta is cooked in a combination of beef broth and water to flavor the dish as it cooks; finally, provolone cheese and cream cheese are stirred in for creaminess. Ingredients:

- 1/2 lb 96%/4% extra-lean ground beef
- 1/2 a large green bell pepper
- 1/2 a large white or yellow onion
- 4 oz mushrooms
- 2 cloves garlic
- 1 tbsp Worcestershire sauce
- 1.5 cups lower-sodium beef broth
- 1 cup water
- 1/2 tsp kosher salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 8 oz (half a box) of whole-wheat rotini pasta, or any short pasta shape you like
- 1.5 oz provolone cheese
- 2 tbsp reduced-fat cream cheese


Instructions:

To Prep:
--
1. Chop your veggies: seed and slice the green bell pepper, slice the onion into half-moons, slice the mushrooms, and mince the garlic.


To Cook:
--
1. Add olive oil spray to a large Dutch oven, and cook the ground beef on medium high heat for about 5 minutes, or until browned and no longer pink.

2. Remove the beef from the pot (you can keep the drippings in the pot).

3. Add more olive oil spray to the pot, and add the sliced pepper, onion, and mushrooms.

4. Cook the vegetables for 8-10 minutes or until tender and slightly caramelized.

5. Add the garlic and cook for 1 minute or until fragrant.

6. Add the cooked beef back to the pot.

7. Add the Worcestershire to the pot, followed by the beef broth and water. Scrape the bottom of the pot with a wooden spoon to pick up any burnt bits.

8. Add the kosher salt, garlic and onion powder.

9. Bring this liquid to a boil. Then, add the pasta.

10. Stir the pasta, then cover the pot and reduce the heat to simmer.

11. Cook the pasta for about 10 minutes or until tender.

12. Stir in the provolone and the cream cheese.

13. Taste and adjust seasonings.

14. Divide into 4 servings. Any unneeded servings can be quickly cooled, lidded tightly, and stored in the fridge for the following day. Enjoy!
