Roasted Edamame Protein Trail Mix
Snack idea by Megan Gaul , adapted to the portions designated in your Partake meal-plan.
You can't beat the stats on this trail mix recipe. Not only is it crunchy, sweet-and-salty, and super-delicious, it also has a whopping 19 g of protein per serving. This will become the most filling and satisfying trail mix in your snack-repertoire.
You can get creative with this recipe. Since there are so many different flavors of protein bars and lots of different nuts you could swap in, experiment to see what combinations are your favorites. Here are some that I've tried: Peanuts with a peanut butter protein bar, walnuts with a chocolate protein bar, and my personal favorite, almonds with a lemon protein bar. Enjoy!
Prep Time: 5 minutes
Cook time: 0 minutes
Yield: 4 servings
Ingredients:
- 1 cup roasted edamame (unsalted, if you can find it)
- 1/2 cup nuts (my favorites are whole raw almonds, shelled pistachios, or a mix)
- 1 protein bar that contains at least 20 g of protein (some examples: Pure Protein bars, or Kirkland Signature protein bars)
Instructions:

1. Take the protein bar, and chop it into bite-size pieces.
2. Add the roasted edamame, nuts, and chopped protein bar bits to a large bowl and mix until combined.
3. Divide trail mix into 4 separate ziplock bags, and store sealed at room temperature throughout the week.
