Warm Apple Pie Yogurt Bowl

This recipe takes a unique spin on the humble yogurt breakfast. Using the technique of adding your favorite flavor of protein powder, it amps up the taste AND makes it more filling.

Make sure you mix your yogurt well and use a flavor of protein powder that you KNOW you love---since there's nothing worse than a chalky, low-quality protein powder. My favorite protein powder brand for mixing into yogurt is Optimum Nutrition Gold Standard French Vanilla Creme. Experiment to see which brands give you the best result.

Ingredients:

- 3/4 cup plain greek yogurt (lowfat or nonfat)
- 1/2 scoop vanilla protein powder (such as Optimum Nutrition Gold Standard French Vanilla Creme)
- 1 tbsp light sweetener (reduced-calorie pancake syrup goes very well with these flavors)
- 2/3 cup of chopped apples (approximately half of a medium apple)
- 1/8 tsp lemon juice
- 1/8 tsp cornstarch
- 1/2 tsp + 1/2 tsp cinnamon (divided)
- 1/2 tsp brown sugar


Instructions:

For the yogurt:
--
1. Combine yogurt, protein powder, light sweetener, and 1/2 tsp cinnamon in your bowl.

2. Stir well (I find that using a fork works best) until the protein powder is fully incorporated and the mixture is as smooth as possible.

3. Set aside while you prepare the warm apples.


For the apples:
--
1. Add chopped apples to a microwave-safe bowl.

2. Sprinkle the lemon juice and cornstarch on top of the apples and toss together with your hands.

3. Microwave for 1 minute. Check on apples; if they are not soft enough for your liking, keep microwaving in 30-second increments until they're cooked to your preference.

4. Add 1/2 tsp cinnamon and brown sugar to the warm apples, and mix until fully combined. The apples will create a cinnamony sweet syrup. Add the "apple pie" apples to the top of your yogurt bowl, and enjoy right away.
