- In a large bowl, add butter (slightly softened but not melted) and sugar. Using a stiff rubber spatula, a wooden spoon, or even an electric mixer on low speed, cream butter and sugar together.
- Add vanilla extract and pinch of salt, and mix til combined smoothly.
- Add oat flour, protein powder, and cocoa powder, and rub together with spatula or fork (or continue mixing on low) til the mixture is crumbly and uniform.
- Sprinkle in a little bit of the almond milk with your fingers, and stir again til a dough forms. If it's still too crumbly, sprinkle in a little bit more of the liquid and mix again til it's the right consistency. Adjust to your preference.
- Add dark chocolate chips, fold to combine, scoop, and serve!
Notes
Don't use regular all-purpose flour in this recipe, unless you've heat-treated it to make sure it's safe to eat without baking the dough.
