Pumpkin Pie Overnight Oats

This overnight-oats recipe takes the warm spices and sweet pumpkin flavor from the classic dessert, and brings it to you in breakfast-form.

This recipe has almost 17 g of protein, since it includes some unflavored protein powder mixed well into the oats. This is one of the best ways to turn oatmeal into a super-filling and satisfying meal that'll hold back your hunger until lunchtime. My favorite protein powder brand for mixing into overnight oats is Quest Multi-Purpose Protein Powder. Experiment to see which brands give you the best result.

Ingredients:

- 1/3 cup unsweetened plain almond milk
- 1/4 cup pumpkin puree (not pumpkin pie filling, just plain pumpkin only)
- 1/8 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- 2 tsp plus 1/2 tsp brown sugar (divided)
- 1/3 cup rolled oats
- 1/2 scoop unflavored protein powder (such as Quest Multi-Purpose Protein Powder)
- 1 pinch kosher salt
- 1 tsp chopped walnuts or pecans (In case of nut allergies, swap out the nuts for a teaspoon of your favorite nut-free granola)


Instructions:

The night before:

1. Combine the almond milk, pumpkin, vanilla, spices, and 2 tsp of brown sugar in a lidded container and whisk with a fork until smooth.

2. Add the oats, the protein powder, and the pinch of salt. Mix again until fully incorporated.

3. Close the lid and store in the fridge overnight.


In the morning:

1. The oats will have absorbed some of the moisture and the mixture will be thicker. Pour the oats into a bowl. They are excellent cold, but uf you would like them warm, microwave them in 30-second increments until desired temperature.

2. Top your oats with another 1/2 tsp of brown sugar and the chopped nuts (or granola). Sprinkle a little more cinnamon, if you desire.
