Quick Turkey Chili

A short list of ingredients, keeps chopping to a minimum, and uses ground turkey in place of beef without missing out on flavor. A perfect weeknight chili!

Yield: 4 servings
Ingredients:
- 1 medium green bell pepper
- 5 scallions
- 2 oz cheddar cheese
- 1 tbsp vegetable oil (such as avocado, grapeseed, safflower, or canola)
- 2 tbsp tomato paste
- 2 tbsp chili powder
- 1 tsp ground cumin
- Kosher salt, to taste
- 1 lb ground turkey, 93% lean
- 1 can (28 oz) diced fire-roasted tomatoes
- 2 cups low-sodium chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- Crushed tortilla chips (about 22 small round chips, or 6 to 7 regular-sized chips)
Instructions:
To Prep:

1. Roughly chop the green pepper. Slice the green onion, and separate the white and green parts.
2. Shred the 2 oz of cheese and set aside.
3. Crush the tortilla chips and set aside.
To Cook:
--
1. Heat the vegetable oil in a large pot over medium-high heat. Add the tomato paste, chili powder and cumin and cook, stirring, until the mixture darkens, about 1 minute. Add 1/2 cup water, the bell pepper, scallion whites and 1 teaspoon salt. Cook, stirring, until the bell pepper is crisp-tender, about 4 minutes. Add the turkey and cook, breaking up the meat with a wooden spoon, until cooked through, about 4 minutes.
2. Stir the tomatoes, chicken broth, beans and crushed tortilla chips into the pot; bring to a simmer. Partially cover and cook, stirring occasionally, until thickened, 10 to 12 minutes. Stir in all but a few tablespoons of the scallion greens and season with salt.
3. Divide into 4 (putting any unneeded portions in individual lidded food containers, letting them cool, and storing in the fridge or freezer). Top your serving with cheddar and the remaining scallion greens. Enjoy!
