Packed with vibrant, nutrient-rich leafy greens, this veggie side is delicious, satisfying, filling, AND low-calorie. What makes it truly special is its use of sesame seeds and sesame oil. It's rich, nutty, toasted, and zingy too. But it's not just about taste – this dish is a powerhouse of nutrition. Dark leafy greens are rich in vitamins A, C, and K, several B vitamins, and potassium too. This dish makes it a breeze to prioritize your well-being without sacrificing on flavor. Not to mention, it only takes about 10-15 minutes to throw together (and only 6 ingredients).

  1. If you're using kale, remove the stems (I like to grab the leaf part with my non-dominant hand to keep it steady, then use my dominant hand to just rip out the stem part.) Wash all the leaves in a strainer, then chop the kale into strips or bite-size pieces. The same goes for any leafy green that has a tough stem. If you're using cabbage or spinach, simply shop or shred it.
  2. Peel, smash, and mince the garlic.
  3. Grab a decent-size pot (big enough for your pile of greens). Turn the stove to low and warm up the oil in the pot. Then add the garlic and cook for around 2 minutes.
  4. Throw in the kale. Stir to coat the kale in the garlic oil as best you can. Season with a pinch of kosher salt. Cook until it wilts slightly, 5- 8 minutes. You get to choose how cooked you'd like your greens (try a bite to see if it's your desired doneness).
  5. To your serving bowl, pour in the soy sauce, sesame oil, and sesame seeds. Whisk it together. Transfer the wilted greens to your serving bowl. Give it all a good mix. Taste it and add more seasoning if you feel like it needs it. Serve it up warm and enjoy!
