Taco Stuffed Sweet Potatoes

These Taco Stuffed Sweet Potatoes will take your taco night to a new and healthy level! Nutritious sweet potatoes are filled with your favorite taco toppings and ready in under 20 minutes. The perfect quick and healthy dinner!

Ingredients:
- 1 medium onion, yellow
- 2 cloves garlic
- 1/2 cup cherry or grape tomatoes
- 3/4 lb lean ground beef (90% lean)
- 1/2 packet low-sodium taco seasoning
- 3/4 cup chunky salsa
- 1/4-1/3 cup water
- 4 medium sweet potatoes (about 3 lbs total)
- 1/4 cup of your favorite hard cheese, shredded or crumbled (cheddar, monterey jack, pepper jack, and queso blanco all work well here)
- 4 tbsp guacamole

1. Get your veggies ready. Chop the onion. Smash, peel, and mince the garlic cloves. Finally, dice the tomatoes you'll use for your toppings later.
2. If your cheese is not already shredded or crumbled, now is the time to do it.
To Cook:

1. Brown ground beef, chopped onion, and garlic in a large skillet over medium high heat. Add the taco seasoning and salsa, along with a few pinches of kosher salt, to taste.
2. Reduce heat to medium low and cook for about 5 more minutes until mixture has thickened and is heated through. Add up to 1/3 cup of water to achieve desired consistency. Taste, and season again with kosher salt if needed.
3. While the meat is cooking, poke holes all over the sweet potatoes and cook in the microwave for 8-10 minutes on high, turning sweet potatoes over once halfway through. If potatoes aren't soft enough, continue cooking 1-3 minutes more. I usually cook two potatoes at one time, but if your microwave allows, you could cook all four at once. Allow sweet potatoes to cool slightly, then slice them lengthwise and fluff the insides with a fork.
4. Spoon the cooked taco meat over the sweet potatoes and add a tablespoon of shredded cheese, a tablespoon of guacamole, and a few diced tomatoes. If you are saving any servings for later in the week, store the toppings, potatoes, and meat mixture separately. Enjoy!
