It also serves well as a meal prep, in case you are making dinners for yourself in advance.

Marinated Steak Ingredients:

- 20 oz (1 1/4 lbs) raw lean tri-tip steak (or top sirloin)
- 1.5 tbsp vegetable oil (such as avocado, grapeseed, safflower, or canola)
- 2 tbsp low-sodium soy sauce
- 2 tbsp worcestershire sauce
- 2 tbsp balsamic vinegar
- 2 tsp dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp kosher salt (optional, to taste)

Rosemary Potatoes Ingredients:

- 20 oz (1 1/4 lb) baby potatoes, halved
- 1.5 tbsp vegetable oil (such as avocado, grapeseed, safflower, or canola)
- 1/4 tsp dried rosemary
- 1/4 tsp black pepper
- 1/4 tsp kosher salt

Parmesan Asparagus Ingredients:

- 20 oz (1 1/4 lbs) fresh asparagus, trimmed
- 1 tbsp vegetable oil (such as avocado, grapeseed, safflower, or canola)
- 2 tbsp grated parmesan cheese
- 1/4 tsp black pepper
- 1/4 tsp kosher salt


Instructions:

For the steak:
--
1. Combine ingredients for steak marinade. Add steaks and let sit, covered, at room temperature, for half an hour to two hours.
2. Preheat a cast iron skillet or fry pan over medium-high heat. Cook steaks 4-5 minutes per side for medium-rare. Let steaks rest for 10-15 minutes before slicing.

For the potatoes:

1. Preheat oven to 400 degrees F.

2. Wash baby potatoes and halve or quarter larger potatoes.

3. Toss with oil and spices.Spread out potatoes on a large baking sheet (I line mine with parchment for easier cleanup) and roast 40-45 minutes.

For the asparagus:
--
1. Preheat oven to 400 degrees F.

2. Wash and trim fresh asparagus.

3. Toss with oil, parmesan, pepper, and salt.

4. Spread out asparagus on a large baking sheet (I line mine with parchment for easier cleanup) and roast 15-20 minutes (stirring haldway through).

5. Divide steak, potatoes, and asparagus evenly between four plates or meal prep containers. Enjoy! Leftovers will keep in fridge in an airtight container up to one week.
